Simple Holiday Side: Spiced Cumin Carrots

Instructions: Start with 14 medium sized carrots (ideally assorted variety). Peel carrots and arrange in a baking tray. Add olive oil (2 Tbsp), turmeric (1/2 tsp), nutmeg (just a sprinkle), cumin (1 tsp), thyme (1 tsp), salt and pepper into a small mixing bowl. Brush mixture over the carrots. Bake in a preheated oven at 360 F for 50 minutes
